Spiced Fruit & Nut Loaf

         

Whether buttered at breakfast or with a cuppa in the afternoon, a slice of this spiced fruit & nut loaf will excite your palate with an abundance of sophisticated flavours.

Ingredients


  • Spray oil to grease
  • 500 gms ‘0’ flour
  • 2 tsp dried yeast
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp allspice
  • 2 tsp salt
  • 450ml lukewarm water
  • 2 tsp runny honey
  • 1/4 cup dried figs, sliced
  • 1/4 cup dried apricots, sliced
  • ½ cup cranberries
  • ½ cup almonds
  • ½ cup pistachios
  • 1 egg white
  • 2 tsp poppy seeds

Method


    Lightly grease a 28cm x 15.5cm loaf tin with spray oil.


    Place flour, yeast, cinnamon, nutmeg, allspice and salt in a large bowl and mix well to combine.


    Add the water and honey in a medium bowl and stir until dissolved.


    Make a well in the centre on the dry ingredients, and slowly add the honey mixture. Stir until the mixture resembles a sticky dough.


    Cover the bowl with a moist tea towel and place in a warm spot, or into an oven on the proving mode (35°C) to rise for 1 hour or until doubled in size.


    When doubled in size, fold in the dried fruit and nuts (reserving a handful of fruit and nut to place on the top of the bread).


    Lightly flour the bench and roll dough into a log, and place into the greased loaf tin. Set aside to rise for 30 minutes.


    Baste the bread with egg white, and sprinkle with remaining fruit and nut mix and poppyseeds.


    Preheat oven to 220°C with 25% steam. Bake bread for 40 minutes or until cooked through.Place on cooling rack for 10 minutes to cool. Slice and serve with good amount of butter, Enjoy.
