Pears Poached in Vermentino with Ginger Semifreddo

         

Ingredients

    Poached Pears

  • 8 pears (corella)
  • 400g sugar
  • 1ltr Vermentino wine
  • 2 cloves
  • 1 cinnamon stick
  • Rind of one orange
  • Marscapone

  • Semifreddo


  • 6 eggs
  • 150g sugar
  • 200ml fresh cream
  • 1 tbsp freshly grated ginger
  • 150ml water

Serves: 8


    Method

    Poached Pears

    Peel the pears and arrange in a large heavy based pot.

    Add the wine, cloves, sugar, cinnamon stick and orange rind and cover with greaseproof paper.

    Simmer for approx 45 minutes.

    Remove the pears and set aside.

    Reduce the liquid to obtain a syrup consistency.

    Serve pears warm with the syrup and a scoop of marscapone or semifreddo.


    Semifreddo (prepare one day in advance)

    Beat egg yolks with sugar until white and tripled in volume.

    In a small saucepan bring sugar and water to the boil, lower heat and simmer for four minutes.

    stirring continuously.

    Pour into egg and sugar mixture, whisking continuously until mixed together.

    Whip the cream, add the ginger and fold through the eggs mixture.

    Refrigerate overnight.
