Method
- Place peas and sugar snap peas into a small perforated steam oven tray; set steam oven to 100°C; add peas and cook for 5 minutes or until just tender. Drain under cold water and pat dry with paper.
- Place peas in a serving bowl with mint, avocado and feta; pour over combined oil, rind, lemon juice and salt and pepper to taste; mix gently, sprinkle with mint and serve immediately.
Recipe notes
This recipe can be prepared, undressed, a few hours in advance and stored, covered with plastic film, in the fridge. Pour over the dressing just before serving.
