Pea, Avocado, Feta and Mint Salad


Ingredients


  • 500g packet of frozen peas
  • 150g sugar snap peas
  • 2⁄3 cup shredded mint
  • 1 avocado, cubed
  • 100g crumbled feta
  • 2 tbsp extra virgin olive oil
  • Grated rind of 1 lemon
  • 2 tbsp lemon juice
  • Salt and pepper, to taste
  • Mint, to serve

Serves: 4

Preparation Time: 15 minutes

Cooking Time: 5 minutes


Method


  1. Place peas and sugar snap peas into a small perforated steam oven tray; set steam oven to 100°C; add peas and cook for 5 minutes or until just tender. Drain under cold water and pat dry with paper.
  2. Place peas in a serving bowl with mint, avocado and feta; pour over combined oil, rind, lemon juice and salt and pepper to taste; mix gently, sprinkle with mint and serve immediately.

Recipe notes

This recipe can be prepared, undressed, a few hours in advance and stored, covered with plastic film, in the fridge. Pour over the dressing just before serving.
