Olive & Dill Stuffed Rainbow Trout

Ingredients
- 2 x 550g rainbow trout
- 1/3 cup green olives, sliced
- 1/4 cup black marinated olives, sliced
- Half a bunch fresh dill, roughly chopped
- 1 tsp salt
- 1 tsp pepper
- 1 lemon, sliced
Method
- Preheat oven to 180°C fan forced. Line a rectangular baking tray and season trout with salt and pepper.
- Place olives and dill in a small bowl and stuff trout with the olive filling.
- Arrange the lemon slices to cover the fish.
- Bake for 20-25 minutes, until flesh pulls away easily with a fork.
