
Ingredients
- 4 Egg whites
- 1 Cup caster sugar
- Pinch of salt
- ½ Teaspoon vanilla paste
Method
Preheat oven to 100 degrees using top and bottom heat (Convection).
In a clean bowl of electric mixer, whisk the egg whites and salt to form soft peaks.
Add vanilla paste and gradually add in the caster sugar, 1 tablespoon at a time, whisking well between
each addition to dissolve sugar.Once all sugar is added, whisk on high speed for a few minutes until the mixture is thick and glossy.
Pipe onto baking paper to form Meringue wreath or spoon onto baking paper for individual meringues.
Place meringue in preheated oven and cook for 1 ½ hours. Turn oven off and allow the meringue to cool in the oven.
Once cool, remove and decorate.
