Ingredients
- 210g plain flour
- 2 tsp baking powder
- 220g caster sugar
- A pinch of salt
- 1 cup Greek yoghurt
- 3 XL eggs
- 1 lemon (zested and juiced separately)
- ½ tsp vanilla extract
- 125 ml rice bran or sunflower oil
- 125g icing sugar (sifted)

Method
- Place the flour, baking powder, sugar and salt in a large mixing bowl. Use a hand whisk to combine.
- In a separate bowl whisk together the yoghurt, eggs, lemon zest, vanilla and oil.
- Grease and line a loaf pan with baking paper. Pour in the batter.
- Place into your V-ZUG CombiSteam on the oven rack on Level 2.
- Select BakeOMatic, Loaf Cake – Medium Brown and start.
- When automatic timing is complete remove and allow to cool in the tin for 10 minutes.
- Remove and place on a cooling rack.
- Combine the icing sugar with the lemon juice. Drizzle over the cake. Slice and serve.
