Lemony Yoghurt Cake

Ingredients

    Cake

  • 210g plain flour
  • 2 tsp baking powder
  • 220g caster sugar
  • A pinch of salt
  • 1 cup Greek yoghurt
  • 3 XL eggs
  • 1 lemon (zested and juiced separately)
  • ½ tsp vanilla extract
  • 125 ml rice bran or sunflower oil
  • 125g icing sugar (sifted)

Method


  • Place the flour, baking powder, sugar and salt in a large mixing bowl. Use a hand whisk to combine.
  • In a separate bowl whisk together the yoghurt, eggs, lemon zest, vanilla and oil.
  • Grease and line a loaf pan with baking paper. Pour in the batter.
  • Place into your V-ZUG CombiSteam on the oven rack on Level 2.
  • Select BakeOMatic, Loaf Cake – Medium Brown and start.
  • When automatic timing is complete remove and allow to cool in the tin for 10 minutes.
  • Remove and place on a cooling rack.
  • Combine the icing sugar with the lemon juice. Drizzle over the cake. Slice and serve.
