Kaffir Lime and Ginger Glazed Ham

Ingredients

  • 1 Whole leg of ham
  • ½ Cup coconut sugar
  • 2 Tablespoons ginger juice (Tip: Grate ginger and squeeze out the juice)
  • 2 Tablespoons crushed garlic
  • 1 Kaffir lime leaf, finely shredded
  • 2 Tablespoons lime juice
  • 1 Mild chilli, finely chopped (Tip: Remove seeds if you don’t want heat)
  • 1 Teaspoon Chinese five spice powder
  • Whole star anise

Method

Preheat oven to 150 degrees on Combi Steam mode.

Cut a zigzag pattern around the shank of the ham skin.

Gently remove the ham skin.

Score a diamond pattern into the fat, but do not cut through to the meat.

Put the ham into a large roasting pan lined with foil.

Combine the rest of the ingredients except for the star anise and spoon over the ham.

Arrange the star anise in a pattern on the ham.

Bake for approximately 2 hours, depending on the size of ham.

Every 15 minutes, baste the ham with the pan juices.

At the end of cooking stage the ham should be golden brown and warmed through.

Allow to rest for 20 - 30 min before carving.
