Honey and Spice Baked Porridge with Pears

Ingredients

  • 2 cups rolled oats
  • Zest of ½ lemon
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp vanilla paste
  • 2 star anise
  • 500ml milk
  • 250ml cream
  • 2 ripe pears, peeled, cored and diced
  • ¼ cup honey, plus extra to serve
  • 100g roasted almonds, roughly chopped, divided

Method

In a baking dish, combine the oats, lemon zest, spices, milk, cream and stir to combine. Cover and refrigerate for 2hours or overnight.

Preheat oven to 160°C Fan.

Remove oats from fridge and stir through pears, honey and half the almonds. Cover tightly with foil and bake for 25 30 minutes until the oats are cooked and milk is absorbed. Remove star anise and serve warm with extra honey and almonds over the top.
