
Ingredients
- 200g Unsalted butter
- 150g Brown sugar
- 150ml Golden syrup
- 2 Eggs
- 780g Plain flour
- ½ Teaspoon baking powder
- 1 Teaspoon ginger powder
- 2 Teaspoons cinnamon
Method
Place the butter and sugar in the bowl of electric mixer and beat until light and fluffy. Add the golden syrup and eggs mixing well to incorporate.
Sift together the flour, baking powder, cinnamon and ginger.
Add to the butter mixture, beating until the mixture just comes together to form a smooth dough.
Roll out between 2 sheets of baking paper to approximately 4 mm thick.
Refrigerate until firm and cut into desired shapes.
Bake in preheated fan oven on 160 degrees until golden.
