
Spiced Mulled Wine
Ingredients
- 1 Orange - peel only
- ½ Lemon - peel only
- 2 Bottle red wine
- 1 Cup caster sugar
- 2 Cinnamon sticks
- 1 Vanilla pod - split lengthwise
- 3 Star anise
- 4 Cloves
- 2 Bay leaves
Method
In a large saucepan combine the sugar, fruit peels and spices with 1 cup of red wine. Gently simmer until sugar has dissolved.
Allow to simmer for 5 - 10 minutes, allowing flavours to infuse.
Add remaining red wine and gently heat. Do not boil as this will burn off the alcohol.
Ladle into heat proof mugs and enjoy.

Pink Gin Spider
Ingredients
- 1 Cup frozen strawberries
- 1 Cup chilled rosé
- 2 Cups ice
- 50ml Gin
- 1 Cup Lemon lime bitters
- 1 Scoop Vanilla ice-cream per glass
Method
Combine all ingredients except ice-cream in a high powered blender and blend until smooth.
Pour into glasses and top with ice-cream.

Christmas Eggnog
Ingredients
- 5 Eggs, separated
- ¾ Cup caster sugar
- 1 Cup full cream milk
- 1 Cup thickened cream
- 2 Cinnamon sticks
- 1 Teaspoon vanilla paste
- ½ Teaspoon ground nutmeg
- ½ Cup white rum
- Extra 2 tablespoon caster sugar
- Nutmeg for garnish
Method
In a saucepan combine the milk, cream, vanilla, cinnamon sticks and nutmeg.
Bring to boil over medium heat then remove from heat and allow flavours to steep.
Whisk together the egg yolks and sugar to thick ribbon stage.
Slowly pour in warm milk and cream mixture. Continue to whisk until well combined and smooth.
Whisk in white rum and refrigerate until cold.
Before serving, whisk the egg whites and 2 tablespoon of caster sugar to form soft peaks.
Fold into eggnog mixture and pour into serving glasses.
Garnish with a sprinkle of nutmeg.
