Singapore Noodles with Fresh Tiger Prawns

Ingredients

  • 150g Fresh tiger prawns, peeled and deveined
  • 200g rice noodles
  • ½ Purple onion, peeled and sliced
  • 1 Carrot, peeled sliced thinly sliced
  • 2 Bunches of broccolini, roughly chopped into florets
  • 1 Small wedge of purple cabbage, roughly sliced
  • 6 Baby corn
  • 1 Bunch Gai lan
  • 2 Eggs, lightly beaten
  • 2 Tablespoons light olive oil
  • 1 Tablespoon sesame oil
  • 1 Tablespoon soy sauce
  • 1 - 2 Teaspoons curry powder
  • Garnish
  • ½ Packet bean sprouts
  • Thai basil leaves
  • Coriander leaves
  • Fried shallots
  • 1 Long chilli, thinly sliced
  • 1 Lime cut into wedges

Method

Place rice noodles in large bowl and cover with boiling water.

Allow to soak until soft. Strain and rinse with cool water.

Lightly heat olive oil in a wok or heavy based fry pan.

Pour in egg mixture and swirl around to form a thin omelette.

Remove from pan and slice into strips.

Add the onion to the hot wok and saute until tender, quickly adding the other vegetables and stir fry until lightly cooked.

Stir through noodles and prawns and add the sesame oil, soy sauce and curry powder. Cook on high heat for 5 minutes or until heated through.

Place on serving platter and sprinkle with omelette, bean shoots, chilli, fried shallots and fresh herbs.

Serve with lime wedges.


Croque Monsieur Gratin

Ingredients

  • 6 Croissant
  • 150g sliced ham
  • 150g grated cheese
  • ½ Cup baby spinach
  • 2 Tablespoons dijon mustard
  • 2 Tablespoons creme fraiche
  • 8 Eggs
  • 1 Cup thickened cream
  • Fresh thyme leaves
  • Sea salt and pepper
  • 50g grated cheese

Method

Slice open croissants and spread one side with the dijon mustard.

Layer sliced ham and grated cheese and top with creme fraiche.

Close croissants and cut into three.

In a large bowl whisk together the eggs and cream.

Season with sea salt and pepper. Add thyme leaves.

Dip croissant pieces into the egg mix and arrange in a ovenproof dish.

Pour remaining egg mixture over the croissants and sprinkle with grated cheese.

Bake in a preheated oven at 180 degrees for approximately 20 minutes or until egg mixture is set and topping is golden.
