Best Ever Pancakes


 Ingredients

  • 2 cups (300g) plain flour
  • 1/4 cup (55g) caster sugar
  • 1 tbsp baking powder
  • 1/4 tsp bicarbonate of soda
  • 1/2 teaspoon salt
  • 1 ¾  (430ml) cups milk
  • 1 egg, lightly whisked
  • 60g butter, melted
  • 2 tsp vanilla extract
  • Melting butter, for cooking

                                                                      Serves: 12

                                                                      Preparation Time: 15 minutes

                                                                      Cooking Time: 4-6 minutes per pancake


                                                                      Method


                                                                      1. Place flour, sugar, baking powder, bicarbonate of soda and salt in a large bowl and stir until well combined. Make a well in the centre; add combined milk, egg, butter and vanilla and use a whisk to stir until a smooth batter forms. Cover with plastic wrap and set aside for 15 mins to rest.
                                                                      2. Heat a large non-stick frying pan over medium-low heat. Brush with a little melted butter. Pour 1/4 cup (60ml) of the batter into the pan. Cook for 2-3 mins or until bubbles appear on the surface of the pancake. Turn and cook for a further 2-3 min or until lightly golden and cooked through. Transfer to a plate. Cover with foil to keep warm. Repeat with the remaining batter and melted butter to make 12 to 14 pancakes.
                                                                      3. Divide the pancakes among serving plates. Top with your choice of toppings - cream or ice cream, drizzled with syrup, berries or banana. Or serve simply with lemon juice sprinkled with sugar!
