Ingredients
- 2 cups (300g) plain flour
- 1/4 cup (55g) caster sugar
- 1 tbsp baking powder
- 1/4 tsp bicarbonate of soda
- 1/2 teaspoon salt
- 1 ¾ (430ml) cups milk
- 1 egg, lightly whisked
- 60g butter, melted
- 2 tsp vanilla extract
- Melting butter, for cooking
Serves: 12
Preparation Time: 15 minutes
Cooking Time: 4-6 minutes per pancake
Method
- Place flour, sugar, baking powder, bicarbonate of soda and salt in a large bowl and stir until well combined. Make a well in the centre; add combined milk, egg, butter and vanilla and use a whisk to stir until a smooth batter forms. Cover with plastic wrap and set aside for 15 mins to rest.
- Heat a large non-stick frying pan over medium-low heat. Brush with a little melted butter. Pour 1/4 cup (60ml) of the batter into the pan. Cook for 2-3 mins or until bubbles appear on the surface of the pancake. Turn and cook for a further 2-3 min or until lightly golden and cooked through. Transfer to a plate. Cover with foil to keep warm. Repeat with the remaining batter and melted butter to make 12 to 14 pancakes.
- Divide the pancakes among serving plates. Top with your choice of toppings - cream or ice cream, drizzled with syrup, berries or banana. Or serve simply with lemon juice sprinkled with sugar!
