
Ingredients
- 1 standing rib roast, (1.2-1.5kg) 5-6 bones
- 2 tbsp olive oil
- 2 tsp fennel seeds
- 2 tsp sea salt flakes
- 1 cup (250ml) boiling water
- 5 Pink Lady apples
- Juice of 1 lemon
- ½ cup apple juice
- 2 tbsp brown sugar
- 1 tbsp white sugar
- ¾ tsp cinnamon
- ½ tsp salt

Method
1. In a medium frypan over medium heat, dry roast the fennel seeds for 40 seconds, then combine in a bowl with the sea salt flakes. Set aside.
2. Preheat oven to 230℃ on fan-forced function.
3. Pour boiling water over the skin of the rib roast and pat dry. Score the skin along the bone lines, drizzle with olive oil, and generously season with fennel salt mix. Place into a lightly greased roasting pan and put in the oven for 30 minutes, until the skin starts to crackle.
4. Set up BBQ for indirect cooking method and place your favourite flavoured wood chips over the heat source to infuse food with smoke.
5. Peel the apples and toss with le8. Place apples, apple juice, brown sugar, white sugar, cinnamon, and salt in a saucepan over medium heat and allow to simmer for 15-20 minutes until soft.mon juice to prevent browning, then place in indirect heat zone of your BBQ for 25-30 minutes. Remove apples from the grill and set aside.
6. Remove pork from oven and place in indirect heat zone, on medium heat of 170-175℃. Continue to cook for another 15-20 minutes until internal temperature reads 63℃, or when juices run clear.
7. Remove core and seeds of apples and roughly chop.
8. Place apples, apple juice, brown sugar, white sugar, cinnamon, and salt in a saucepan over medium heat and allow to simmer for 15-20 minutes until soft.
9. Remove roast from heat, loosely tent in foil and set aside allowing the meat to rest.
10. Place apples in the food processor and blend until smooth, then pour into a serving bowl.
11. Remove foil from the roast, slice 1 bone per person, garnish and serve with smoked apple sauce
