Reinvent this cafe staple with a handful of spicy ingredients such as paprika and cumin seeds. The smoky tomato relish is what elevates this recipe above the everyday, helping each mouthful linger that little bit more.
Ingredients
- ½ brown onion, finely diced
- 2 tbsp olive oil
- 2 tsp yellow mustard seeds
- 2 tsp smoked paprika
- 2 tsp cumin seeds
- 2 x tins diced tomatoes (800g)
- ½ cup brown sugar
- ¼ tsp salt
- 1 tbsp red wine vinegar
- 8 rashers bacon
- 8 Burger Buns
- 8 eggs
- Salt
- Pepper
Method
In a large pot over medium heat, saute the onion until soft. Add in mustard seeds and cook for a further 1-2 minutes or until popping.
Add paprika, cumin and cook for 2 minutes before adding tomatoes. Reduce temperature and simmer for 15 minutes or until slightly reduced.
Add in brown sugar, salt and vinegar and cook for another 10 minutes.
Over a griddle pan or bbq plate, charr bacon until cooked, and toast bread buns.
In a large pan over high heat, fry eggs to liking and season with salt and pepper.
Serve burger buns with bacon, egg and smoky tomato sauce. Enjoy!
