Apple Cider, Orange Glazed Christmas Ham


 Ingredients

  • 5.5kg whole leg ham, on the bone
  • 4 cups (1L) apple cider
  • 2 tbsp grated orange rind
  • 1⁄3 cup (80ml) orange juice
  • 1⁄2 cup (180g) honey
  • 1 cup (250ml) cognac or brandy
  • 2 star anise
  • 3 whole cloves
  • 1 cinnamon stick
  • 4 thyme sprigs
  • 1 shallot, thinly sliced
  • 1⁄4 cup (70g) seeded mustard
  • 40g butter
  • Salt and freshly ground pepper, to taste

                          Cooking Time: 60 minutes


                          Method


                          1. Preheat oven to convection steam at 170°C. Line a baking tray with 2 layers of foil, then top with 2 layers of baking paper.
                          2. Using a sharp knife, cut around the shank of the ham, about 10cm from the end. Run a knife around the edge of the ham where the rind meets the fat. Gently lift the rind off in 1 piece by running your fingers between the rind and the fat. Score fat in a diamond pattern, about 1cm apart, being careful to score only the fat and not the ham. Place ham onto a prepared baking tray.
                          3. In a medium saucepan, add apple cider, orange rind and orange juice; cook on medium-high until the mixture has reduced by half and has thickened into a shiny glaze. Add honey, cognac, star anise, cloves, cinnamon, thyme and shallots; cook until reduced by half. Strain in a sieve and discard solids. To the glaze, add mustard and butter and season with salt and pepper.
                          4. Brush the ham all over with the glaze; place it on level 1 of the oven and cook for 1 hour, basting the ham every 20 minutes.
                          5. Remove ham from the oven and rest for 30 minutes before slicing and serving.

                                Recipe notes

                                • To store ham, wrap it in a damp towel or ham bag and store it in the fridge for up to 7 days.
                                • Lining the baking tray with 2 layers each of foil and baking paper will save you from having to scrub the sticky glaze from the tray later!
                                • If the glaze starts to burn while the ham is cooking, cover those parts with foil and turn the oven down slightly.
