Ingredients
- 2 apples, peeled, cored and diced 2 tablespoons Marsala
- 3 eggs
- 1⁄2 cup caster sugar
- 1 cup plain flour
- Pinch of salt
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1⁄2 teaspoon grated nutmeg 140g butter, melted and cooled
- 2 egg whites
- 1⁄4 cup brown sugar
- 1⁄4 cup caster sugar
- 1⁄4 teaspoon ground cinnamon Pinch of ground cloves
- 2 tablespoon sliced almonds
Meringue
- Pure icing sugar, sifted
- Cream, lightly whipped

Method
Grease a 22cm round spring-form tin and line the base and sides with baking paper. Pre-heat oven on Cakes Plus at 170°C.
Combine the apples and Marsala and set aside.
Beat the eggs and sugar until very thick and pale. Sift in the flour, salt, baking powder and spices and gently fold everything together using a large metal spoon.
Add the cooled butter and the apples with any liquid and fold together making sure there are no pockets of flour in the batter.
Pour mixture into the tin, place on shelf position 1 and bake for 30 minutes.
Meringue
Whisk the egg whites until soft peaks form and then gradually beat in both sugars and the spices. Continue beating until very thick and glossy. Fold in the almonds.
After 30 minutes, remove cake from the oven and Select Combination Mode. Select Conventional at 190°C + 0% moisture + 20 minutes duration.
Place spoonful’s of the meringue over the top of the cake and spread with a fork.
Place cake back in the oven and bake for a further 20 minutes, until the cake is cooked and the meringue is lightly golden.
Let the cake cool slightly before removing from the tin.
To serve
Dust with icing sugar and serve with cream.
HINTS AND TIPS
Using combination mode with 0% moisture produces a crisper meringue as the climate sensor is working to eliminate the moisture throughout the cooking process.
If using an oven without combination mode, select Conventional at 190°C for 15-20 minutes.
