The Three Pillars of Food Preservation

Good refrigeration is essential to prolonging the life of food and reducing kitchen waste. With 75 years of innovation behind it, the American brand Sub-Zero aims to go a step beyond the norm with its holistic food preservation system. The maker says there’s more to food preservation than simply keeping it cold, and its appliances are designed to guard freshness by addressing three pillars of food preservation: temperature control, proper humidity and purified air.


Temperature control
So far, so logical. Sub-Zero’s microprocessor controls the refrigerator’s interior temperature to within a degree of its set point. An advanced air seal around all four sides of the door prevents leaks while conserving energy.

Proper humidity
To preserve flavour, fresh foods need chilly, humid air, while frozen foods require frigid, dry air. Sub-Zero’s dual refrigeration creates separate sealed systems for the refrigerator and freezer to ensure optimal humidity for both.

Air purification
Many fresh foods emit ethylene gas, a naturally occurring compound that hastens food ripening and spoilage. Sub-Zero refrigerators come fitted with an air purification system based on technology developed by NASA that scrubs the air of ethylene and odour every 20 minutes.
