Gas or Induction Cooking: Which is right for you?

As seen in our Winnings Design & Culinary Guide - Issue 07

Both offer advantages. It’s a matter of deciding which is best suited to your needs.

Induction Cooktops

Efficiency

Rather than heating the surface of the cooktop, which then heats the pan, induction cooktops directly heat the pan. This results in lower energy costs and more efficient cooking.

Precision Cooking

Induction cooktops offer rapid heating and excellent temperature control, making them ideal for delicate tasks such as melting chocolate without resorting to a double boiler.

Safety

Since induction cooktops heat the pan directly and not the surrounding surface, they remain cooler to the touch, reducing the risk of accidental burns, a key concern for households with young children. Many induction cooktops also have child lock controls. Cool-down time is fast, and many induction cooktops also turn off or lower the temperature when no cookware is detected by the cooktop.

Easy Maintenance

One big perk of induction cooktops is that they are extremely easy to clean and maintain - simply use a soft microfibre cloth to wipe them down. Sugar, however, is more prone to sticking to glass, so you might need a little extra effort.

Installation Considerations

Check with a licensed electrician whether you need to upgrade your wiring. You may also be eligible for a state government rebate.

Gas Cooktops

Instant Heat Control

Gas cooktops offer immediate heat adjustment - turn the dial and the flame responds instantly, providing precise control over your cooking.

Event Heat Distribution

With gas, the flames caress the pan across the entire surface consistently, including the sides of the pan/wok. This is perfect for stir-frying and caramelising ingredients for rich flavours.

Versatile Cookware Compatibility

You can use any type of cookware on a gas cooktop.

Ease of Use and Maintenance

Gas cooktops are user-friendly, making them a favourite among both amateur cooks and professional chefs. Spills and splatters can be cleaned up almost immediately after cooking, and the removable parts make deep cleaning easy.

Durability

Built to withstand high heat and heavy use, gas cooktops are a long-lasting investment for any kitchen.

Best of Both Worlds

Fusion and combi cooktops integrate the versatility of induction cooktops with the power and control of gas. The induction portion uses electromagnetic fields to directly heat the cookware, providing swift and consistent heat distribution, while the gas burners offer an instant response and are well-suited to high-heat cooking.

Both gas and induction cooktops can elevate your cooking experience.

If you’re after speed, energy efficiency, and safety, induction is a smart investment. If you value versatility, flame-cooked flavour, and universal cookware compatibility, gas might be the better choice.
