Sous-Vide
Simply translated from the French, sous-vide means “under vacuum’. In the kitchen, sous-vide is a style of cooking whereby food is sealed in an airtight plastic bag and then cooked in a water bath using precise temperature control.
It’s a popular way of preparing meat and vegetables because it ensures that the food is cooked evenly all the way through and helps maintain moisture too. Sous-vide cooking also has the added benefits of enhanced flavouring as the ingredients infuse the food, plus there is minimal cleaning as all the ingredients are locked tight in the bag.

Combi Cooking

Combi (or combination) cooking is when a combination of moist and hot air is used to ensure outstanding baking and roasting results. Cooking with steam has always been popular with professional and amateur cooks, as increasing the humidity in the oven optimises baking and roasting results. It’s a method that is particularly good for producing soft, delicious-smelling bread with a shiny, appetising crust or a roast as tasty as you’d find in a restaurant.
