To find out what’s cooking in 2018, we spoke to our resident Culinary Expert, Chloe Skipp, who gave us the top five trends in food and drink we can expect this year.
Meat Alternatives
Look out for the improved profile and availability of plant-based alternatives, with meat and fish increasingly being swapped out for high-quality vegetarian goodness.

“This year expect to see a rise in vegetarian and vegan meals making the mains list on more menus,” says Chloe, “Cauliflower steaks, lentil bolognese and meat free burgers are set to be big.”
The meatless burger is being touted on several internet forums as the next big thing, thanks to the innovative use of “heme”. A molecule that gives meat its colour and flavour, heme has been used by the start-up company Impossible Foods to develop a patty that replicates the juicy qualities so beloved by burger connoisseurs.
No longer an afterthought at the bottom of the menu, vegetarian options are always improving and you’ll find more restaurants like Yellow, in Sydney’s Potts Point, that only serve meat-free dishes.
The Colour Purple
The Pantone Color Institute, a colour consulting company that makes an annual announcement of colour that best represents the design and cultural trends of the moment, has decreed that 2018 is the year for “ultra violet” - labelling the colour “dramatically provocative and thoughtful”.

It’s a sign, according to Chloe, that items such as purple peruvian potatoes, sweet yams and corns are likely to feature prominently on menus, facebook feeds and instagram pages this year.
Non-alcoholic spirits
Thanks to an ever-increasing focus on health this year, particularly amongst millennials, there’s been a new wave of non-alcoholic spirits and cocktails hitting the market.

Chloe says: “UK brand Seedlip use spices, plants and woods to create non-alcoholic distilled spirits to flavour sodas and drinks - deliciously complex flavours without the hangover!”
Healing and Gut Health
Recognition for the importance of gut health was a big determinate of taste in 2017 - and it’s set to remain so in 2018. As we look to cope with the various stresses of modern life this year - and as global political tensions continue to rise - so we will be pursuing activities that help us to relax and find harmony.

Clean, natural and simple foods are definitely trending, as a means to find wellness within. We can also expect the increasing popularity of fermented and pickled foods, such as yogurt, kefir, kombucha and sauerkraut, which have been found to aid digestion.
Middle Eastern spices and dishes
The horizons of our eating practices will broaden in 2018, according to Chloe. “The big bold flavours of the Middle East are set to feature prominently this year,” she says, “moving on from the traditional falafel and hummus and giving us gorgeous breads like Maneesh topped with za’atar, and spicy harissa dishes.”

Authentic spices and ingredients are predicted to become more widespread in menus and supermarkets to meet the demand from consumers for different flavours and more vegetarian options.
